Warm Carrot & Turnip Salad
Ingredients
Carrots – 2
Turnip -1
Roasted Peanuts – 1/4 cup
Coriander – 1/4 cup
Lime Juice – 1 lime
Organic Ghee – 1/2 tsp
Mustard Seed – 1 tsp
Rock salt, Black pepper to taste
Preparation
Roast peanuts to make them crunchy and ground them coarse.
Grate carrots and turnip finely. Mix in finely chopped coriander leaves.
Add salt and black pepper. Squeeze lime juice on to the above mix.
Take ghee and make a tempering with mustard seeds. Add and mix well.
Add crushed peanuts just before serving.
You may use red carrots coming from India or Pakistan to get a different carrot flavor. These are available only in the winter months from Dec to Feb.
Its a delicious meal by itself, perfect for winter season too!
Serving: At room temperature would be best.
Gives you: Beta carotene, anti-oxidants, important Vitamins and minerals.
Note:
* If you are allergic to peanuts, you may avoid using them in the recipe. Its tasty without peanuts too.
