Simple Black Eyed Bean Salad for a Yummy Lunch
Ingredients
2 Cups Black Eyed Beans
1/2 Cup Chopped tomato
1 Avocado chunks
2 Tbsp finely chopped Parsley
2 Tbsp finely chopped Cilantro / Coriander
1/2 Cup finely chopped Carrot
Preparation
Best to soak black eyed beans overnight. *
Boil them next morning in a pan or pressure cooker
Let them cool. Drain the water to collect in a bowl.
Add all chopped items into the drained beans.
Flavor with Lime juice, black pepper, pinch of cayenne pepper for a twist and avocado oil.
Serves 2
Gives you: Required protein and goodness of vegetables.
*You may drink the water that remains after boiling the beans. It is nutritious.
*Dressing Oil can be Olive too.
*Why do we soak the beans overnight? – To make them more easily digestible. This is true of any kind of beans or lentils. The beans, especially can even be soaked longer. You may add some Apple Cider Vinegar or lime juice while soaking.
