Wonderful Savory Pancakes for Lunch
Ingredients
1/2 Cup Finger Millet (Ragi) Flour
1/2 Cup Buckwheat (Kuttu) Flour
1/2 Cup Organic Rolled Oats Flour
1/2 Cup Organic Natural Yogurt
1/2 Cup Mix of Chopped Spring Onion ,Carrot, finely chopped Brussel sprout, Cilantro, finely chopped Zucchini
1/2 tsp finely chopped ginger
Spices to add: 1 tsp Cumin powder
1 tsp coriander powder
1/2 tsp red chilli powder
1/4 tsp turmeric powder
Rock Salt to taste + freshly ground black pepper
Preparation
For best consistency, sieve all flours and mix them together.
Add yogurt to it, mix it well and set aside for 30 minutes. This will make the mixture sour.
Add all other ingredients to this mixture.
Add water if required to make a pancake -like consistency.
Take a heavy bottomed pan.
Spread a serving spoon equivalent amount of this mixture on low flame.
Drizzle or spray some Coconut Oil over and around the pan-cake. Turn it over once the top side starts turning brown. Once cooked on the other side Serve hot with chutney or sauce of your choice.
Gives you: Required protein from the flours. The goodness of vegetables and richness of spices makes it delectable. Coconut oil provides the healthy fat in the meal.
*Chutney option – healthy mint/cilantro chutney or a marinara sauce (prepared from tomatoes) that can be quickly prepared.
