Nutty Cookies with Choc-Chip
Ingredients
1 Cup unsalted Almonds powder *
1 Cup unsalted Walnuts powder
1/2 cup unsalted Pecan Nuts powder
2 Tbsp. desiccated organic Coconut
3/4 Cup Medjool Dates
1/2 Cup Virgin Cold Pressed Coconut Oil
2 Tbsp. Maple Syrup
3 Tbsp. Almond Meal Flour
2 tsp Choc Chips (Cacao nibs)
Preparation
Pulse the dry nuts to powdered form (slightly nutty)
Mix the dates by breaking them slowly.
They are soft, so get mixed easily.
Mix all other ingredients.
Form the mixture into balls.
Press and flatten in cookie sizes of your liking.
Place them on butter paper on an oven tray and then in the freezer for 2 hours.
* You may crush dry almonds in a blender to get powder consistency.
Gives you: enjoyment of cookies but not at the expense of fatty and processed sugars.
